Usually after a morning of buttery, syrupy pancakes, a nap ensues. These pancakes, however, have about 10 grams of protein per serving. Healthy, protein-powered, pumpkin pancakes are a great start for an active day.
Ingredients (makes about 4 servings):
1 cup pumpkin puree
4 eggs
1 cup organic oat flour
2 scoops of vanilla whey protein powder
1 &1/2 tsp cinnamon
1 & 1/2 tsp baking powder
2 tsp of vanilla extract
1 tbsp sweetener of choice (stevia)
9 tbsp of milk of choice
Mix all ingredients together. Pour pancake sized amounts onto non-stick pan or cover bottom of pan with butter or oil.
